“BEHIND THE APRON STRINGS” Our first Cucumber & Cherry Tomatoes from the Garden made a nice side salad along with our Homemade Red, Green Chili Beef Enchiladas! I made some without Cheese & with Pepper Jack Cheese. had a wonderful time camping and covered quite a bit of ground within a three day exscursion. Three bodies of water, River, Ocean and lake.
Nothing like some tasty Homade Fish Tacos and some slaw on the side at the Beach. It’s a simple meal to make while camping.
We camped at the Queets River in the Olympic National Park. Private and beautiful campsites right on the river. Gorgeous old growth Forest with beautiful “Spruce” Trees, totally Remote camping with no portable running water & pit bathrooms. We climbed up into the mountains on a long gravel road what seemed like for hours but as soon as we arrived it was a picturesque sight. The river was a gorgeous color of blue and the roaring of the river was a calming sound during our nights sleep.
Our second stop was at Kalaloch Ocean. We had beautiful weather and stunning sunsets.
And of course S’mores :)
Our last stop was “Lake Crescent” Awesome campgrounds. We hiked down a trail right next to our campsite and found a little private beach right on the lake. A perfect day to end our trip.
Its a Family “Carrot Cake” Recipe, my dad loved it! So when I found out it was my Son’s Girlfriends too, I knew I had to bake it, plus it was her 24th how perfect, 24 Carrot and she is a Diamond :)
